Soups on! Light and fresh, yet also hearty and filling veg soup recipe below 🥣 I found a simple recipe on Pinterest and adapted it to what I had in my fridge and taste preference, feel free to tweak mine as well!
Dice/chop/mince the below:
• 14-16 mini potatoes or 2 Yukon potatoes
• 1 yellow/white onion
• 12 mini carrots or 2 big ones
• 2-3 celery stalks
• 4-5 cloves of garlic
Heat 2 tablespoons of olive oil in a big soup pot. Add in the onions, celery, and carrots and season with 1 teaspoon of salt and 1 teaspoon of pepper. After five minutes, stir in the potatoes and garlic for about one minute. Then add 1-1.5 quarts of veggie broth or water. Bring to a boil and then simmer for about 20 minutes stir in 1.5 cups of frozen peas and simmer for about five minutes. Before removing from heat, add in a ton of spinach and let that wilt down. Serve with toasted sourdough or grilled cheese!
I think this was one of the simplest soups I've ever made yet maybe also my favorite? It was so strait forward and really let the vegetables lead the flavor. I will be making it again and again! Cheers to trying to recipes and learning and growing and making yummy food.
